Struggle to get your veggies in? Not anymore…

Ingredients:
Meatballs-
500g extra lean beef mince
1/2 courgette, shredded
1 carrot, shredded
1/2 tsp oregano
1/2 tsp salt and black pepper
1 egg
1/2 tsp chilli flakes (optional)
1 tbsp tomato paste

Tomato sauce-
400g passata
2 tsp olive oil
1 red onion, chopped
1/2 courgette, chopped
1 tbsp balsamic vinegar
1 tsp garlic powder
1 tsp smoked paprika
1 tsp oregano
30g Philadelphia cream cheese
125g mushrooms, chopped

50g mozzarella, grated
250g spaghetti
Handful basil leaves

Method:
Preheat oven to 190ºC and line a baking sheet with parchment paper. In a large mixing bowl, combine the lean beef mince, whisked egg, shredded carrot and courgette, oregano, salt and black pepper, chilli flakes (optional) and tomato paste, mix well with clean hands or a spatula to combine.

Use a large ice cream scoop or clean hands to form the meatballs into balls. Place on the baking sheet and bake for 18-23 minutes. (Discard any excess fat off the bottom of the pan) Cook your pasta according to package instructions.
